This structured approach will streamline the quoting process, reduce errors, and enhance team efficiency. With this we can also use it to track the time it takes the quotes from creation to the won status.

We have this functionality in PSQ, please see Workflow by Branch and Workflow by Owner. The data on dates is available in SalesLink - Executive, as long as the opportunity box is checked on the quote.
