Default Activity Type Set to Quote Follow Up, And Fix Influencer Type Dropdown

When setting a quote to Submitted status, can we default the activity type to Quote Follow Up. Also, on the same page, the Influencer Type dropdown is not selectable. Please see attached screenshot.
